Mango Lassi – Delicious drink prepared using fresh Mango Pulp and it’s vegan too!

Mango lassi is a common Indian drink served during feasts. No one can deny their love for this tropical fruit. This delicious drink can be made in vegan style by using soy yogurt/almond yogurt or by using Almond milk/Soy milk. Now, prepare this vegan Mango lassi and enjoy your meal without guilt.
Ingredients:
- 1 Medium sized mango – cut into small pieces
- 2-3 Cups of Almond Milk
- 1 tablespoon Maple syrup
- Pinch of salt
- 1 teaspoon Vanilla extract
- Pinch of Saffron
- Pistachios – 4 Chopped finely
Method:
- Peel the skin of mangoes and cut them into small cubes. You can use store bought mango puree but it tastes best with fresh fruit pulp
- In a blender, add mango pieces, almond and blend them well. Ensure there are no fruit chunks left out in the jar
- Now, add salt, maple syrup, vanilla extract and grind them
- To add more richness to the lassi, you can add a cup of almond milk yogurt or soy milk yogurt to the drink and grind them together
- Serve them in glasses with ice cubes. Garnish with chopped pistachios and saffron
- You can stir in ¼ teaspoon of rose syrup for enhanced flavor and taste
