It’s Friday. These Fridays always carry a sense of accomplishment, relief, and happiness with it. Isn’t it? What is your way of enjoying Friday?
I used to prepare a rich dinner of my favorites and enjoy the dinner over a classic Tamil movie. That’s how I appreciate the entire week’s accomplishments, relieve my work stress and welcome weekend. This Friday is not usual as every week. I woke up to a bad day with a sense of pain in my stomach. I love to experiment various cuisines and restaurants. Last night, I had dinner out as we reached lately (after an hour of our usual dinner time) after watching a movie. And I know that everyone would have guessed the movie I watched last night. It’s none other than KABALI. I tried a new variety of chicken recipe and that didn’t feel good on my tummy.
So, this Friday is a real fry day with my pain as well as demonstrations of my work at the office. When I returned home in the evening, I needed a simple yet comfort food which will make my tummy happy . So the best option was rice kanji. Here ends my Friday with a light weight dinner. Whatever may be and however I may be, I never skip my movie schedule on Friday night.
After fast paced weekdays, all that everyone wish is a relaxed weekend, healthy and delicious meals. I guess, most of us, have the habit of waking up in the late morning and spent our morning time in thinking about an easy yet healthy breakfast. I do that every day!
Here is a protein rich recipe for your Saturday morning – Spinach Mushroom Scrambled Eggs:
Scrambled eggs are protein rich breakfast. Make it more nutritious by adding Spinach and Mushroom to it. Spinach comes at the top of the ranking list for nutrient richness. It is a very good source of dietary fiber, phosphorus, Vitamin B1 and Zinc. The possible health benefits of consuming spinach include improving blood glucose control in diabetics, lowering the risk of cancer, lowering blood pressure, improving bone health and more. Mushrooms belong to the fungi kingdom; though they are not vegetables, they provide several important nutrients. Naturally grown foods like mushrooms decrease the risk of obesity, diabetics, heart diseases and promotes a healthy complexion and hair. This nutrient-rich breakfast is easy to prepare and serve a healthy breakfast for your family.
Ingredients:

Eggs, large – 5

Salt – ¼ teaspoon

Pepper, freshly ground – ½ teaspoon

Butter – 1 ½ teaspoon

Mushrooms, thinly sliced – 1 cup

Baby Spinach, chopped – 1 cup
Method:

In a small bowl, whisk eggs, salt, and pepper together and keep aside

In a wide non-stick pan, add butter. Once the butter melts, add sliced mushrooms and Sautee it. Cook and stir for about 4 minutes or until tender.

Add spinach to mushrooms. Cook and stir until it is wilted.

Simmer the flame.

Add egg mixture. Cook until the eggs are cooked and form a layer. Stir together.

Stir in cheese if you like cheesy texture in the eggs.
