Hello guys, Deepavali is just a couple of days away and I know everyone is involved in the preparation of sweets for the festive season. Usually, my Sunday will be relaxed and I binge on watching movies sleeping on my sofa. But, this Sunday was a backbreaking day for me. Having seen my Amma from my childhood, I have inherited her habits and tradition. I cleaned the entire home, rearranged the stuff and prepared sweets & snacks, like how Amma usually do for Deepavali.
Deepavali cannot be celebrated without the preparation of Murukku and other spicy snacks. I was on short of time and I couldn’t spend so much time to prepare murukku. Hence, I decided to prepare these savory diamond biscuits.
Savory Diamond Biscuits – Spicy crispy biscuits prepared with all purpose flour and spices; fried to golden color and super crunchy, perfect as a tea time snack.
I have adapted the recipe from BlendWithSpices
Ingredients:
- 2 cups All-Purpose Flour
- 2 teaspoon Red Chili Powder
- ½ teaspoon Cumin Seeds
- Salt, as required
- Oil for frying
- Water
Method:
- Sieve the flour in a bowl.
- Add chili powder, cumin seeds and combine them well.
- Add a teaspoon of hot oil to the flour and mix it.
- Now, add water little by little to the flour and knead them well into a dough.
- Cover the dough with a lid and let it rest for about 15-20 minutes.
- Meanwhile, heat oil for frying the biscuits.
- Divide the dough into 8 balls. Roll the ball with a rolling pin into a circle.
- Cut the rolled dough with a sharp knife into small diamond shaped ones
- Once the oil becomes hot, deep fry the diamonds until it turns golden on both the sides.
- Ensure to keep the flame on low to medium so that it is not burnt.
- If the oil is too hot, the outer layer will become golden in a few seconds but it will not be cooked inside.
- If the oil is not hot, then the biscuits will become chewy.
- Once tuned golden, drain them on the paper towels and allow it to cool down.
- Repeat the same for the remaining dough.
- Store the biscuits in an airtight container.
