Roth – Kashmiri traditional cookies prepared on an auspicious day, Pun
I love to prepare cookies at home for our tea time snacks than buying them from stores. When looking for options for cookies, I stumbled upon this traditional cookies served as Prasad for Lord Hanuman. The cookie also has a story behind it. To know more, read on
Roth is a sacred traditional Kashmiri cookies prepared on the auspicious day, Pun, in the month of September. The cookies are prepared in the vessels which are kept only for its preparation and usually used once in a year on Punn Duen. Roth is usually prepared in the early morning by the elder lady in the house, offered to the Goddess of Harvest and a thread called Punn is tied around the wrist of the family members. Then the old story of Punn Duen is narrated to the family members and then Roth is offered as Prasad to the family members. Usually, the cookie is deep fried in the oil but I have baked it to make it as a healthy option. Preparation of Roth doesn’t need a celebration; one can prepare for their tea time snack too.
Ingredients:
- 4 Cups – Wheat Flour/All Purpose flour
- 1 ½ Cup Sugar
- 2 tablespoon Butter (at room temperature)
- 6 tablespoon Ghee
- ½ teaspoon Cardamom powder
- 4 tablespoon Milk Powder
- ½ – 1 cup water
- A pinch of salt
- Handful of Almonds
- 2 tablespoon Poppy Seeds
Method:
- In a bowl, sieve flour. Add sugar, milk powder and cardamom powder. Combine them well
- With the dry flour, add ghee and butter. Combine them well. Add a pinch of salt to the mixture
- Now, add water little by little and mix them well with hands. Knead until all the flour comes together. Do not over knead
- Set aside for about 10 minutes
- Meanwhile, preheat the oven to 400 F temperature
- Roll the dough into a circle of ½ inch thickness. Cut the dough into your desired shapes
- Press an almond in the center of the cookie
- Line baking trays with parchment paper. Arrange cookies evenly in the tray. Sprinkle poppy seeds on top of the cookies
- Bake the cookies in the oven for about 30 minutes until they raise and turn slightly brownish
- Serve cookies as Prasad on Punn or simply bake them as a tea time snack and enjoy over a cup of coffee
