Red Velvet Crinkle Cookies – Soft smooth chocolaty cookies with bright red, making it perfect to surprise your Valentine on Valentine's day!
Happy Valentine’s Day Folks!
A day to celebrate love, romance and relationship! That doesn’t sound crazy when we have a day for pizza, chocolate etc. February has been celebrated as the month of Romance and February 14th has been celebrated as The Valentine’s Day in every corner of the world.
As Paulo Coehlo says,
“It was the pure Language of the World. It required no explanation, just as the universe needs none as it travels through endless time. What the boy felt at that moment was that he was in the presence of the only woman in his life, and that, with no need for words, she recognized the same thing. He was more certain of it than of anything in the world. He had been told by his parents and grandparents that he must fall in love and really know a person before becoming committed. But maybe people who felt that way had never learned the universal language. Because, when you know that language, it's easy to understand that someone in the world awaits you, whether it's in the middle of the desert or in some great city. And when two such people encounter each other, and their eyes meet, the past and the future become unimportant. There is only that moment and the incredible certainty that everything under the sun has been written by one hand only. It is the hand that evokes love and creates a twin soul for every person in the world. Without such love, one's dreams would have no meaning.”
“This is what we call love. When you are loved, you can do anything in creation. When you are loved, there's no need at all to understand what's happening, because everything happens within you.”
Yes, when you are in Love, you do beautiful acts, spread smiles and inspire yourself as well as others. That’s the power of Love. Love travels even to the darkest corner of your heart and mind and cleanses it.
I believe that Valentine’s Day is not only for the couples who are in love. It’s for everyone and it’s the day to spread love, smile, and happiness. You may be single still looking for your loved heart or happily married and lost yourself completely in daily chores! Whatever and However you are, let’s consider this day to look back our life, thank our loved ones and most importantly let them know your love for them.
Yes, Say “I Love You” to your mom, dad and brothers. And friends. Come from office early. Cook some delicious dinner for your man and kids. Spend a quality time with friends. Call your friend who has been forgotten for decades and say a “Hello”. Do some random act of kindness. Help a colleague who is struggling with his work. Make a person smile. Give up a bad habit (you got to love yourself more than anyone else). Get over with the fight which has been troubling you and shake hands with them. Spread Love. Accept and appreciate yourself! Thank God! Thank Life! Love all and Love yourself.
Happy Valentine’s Day folks
Love is always symbolized with red roses, red hearts, red candles and red berries. Love and the color Red are closely associated with each other. Today’s recipe is something which you can prepare at the last moment to surprise your Valentine and your loved ones. Of course, it is also red in color – Red Velvet Crinkle Cookies.
The recipe is adapted from the blog – Cooking Classy.
Ingredients:
- 3 Cups All-Purpose Flour
- 3 Large Eggs
- 1 ½ teaspoon Vanilla Extract
- 2 teaspoon Lemon Juice
- ¾ Cup Unsalted Butter at room temperature
- ¼ Cup Unsweetened Cocoa Powder
- 1 1/3 Cup Granulated Sugar
- 2 teaspoon Baking Powder
- ¼ teaspoon Baking Soda
- 7 teaspoon Food Coloring, red (I used gel color)
- ¾ teaspoon Salt
- 1 Cup Powdered Sugar, for dusting cookies
Method:
- Preheat the oven to 350 degrees
- In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Combine them well.
- In another bowl, add butter and granulated sugar. Whip together with a hand mixer until they become fluffy. Add eggs one at a time and blend well until they are combined well. You can use an electric mixer and use the paddle to mix the wet ingredients.
- Stir in the vanilla extract, red food coloring and lemon juice to egg mixture. Blend them well.
- Slowly, add dry ingredients to the bowl and mix them together.
- Cover the bowl and chill in the refrigerator for about 2 – 3 hours. Chilling the dough makes it firm enough to roll into small balls.
- Spread powdered sugar on a wide plate.
- Take out the dough from the refrigerator. Scoop out dough using a spoon and roll out into small balls. You can use butter to avoid the dough sticking to the hand.
- Roll the balls into the powdered such that it is evenly coated.
- Line a sheet pan using parchment paper. Arrange the balls on the sheet and bake in the oven for about 13 -14 minutes. Ensure not to overbake them.
- Let it rest on the pan for few minutes and gently transfer them to wire rack. Allow them to cool down completely.
- Store in an airtight container for future use.
- As days pass, the sugar will be absorbed into the cookies. To avoid this, roll the cookies in the granulated sugar followed by powdered sugar.
You can witness the cookie with crinkles on the top and soft gooey inside. Prepare this ultra-soft red velvet crinkle cookies and surprise your valentine.
Let him/her know that Life may be imperfect like the crinkles on the cookies but the pure love and affection makes it more beautiful and enjoyable like the soft chocolaty dough inside the cookie.
