It’s Friday! The word – Friday – itself is enough for me to bring back all life in me … That was a long and tiring week and can’t wait for the weekend to come. Last week, I attended a birthday function nearby. Since they are Maharashtrians, Pav bhaji was the main dish for the party. You should ask as who is the photographer for the day… It’s me! It was so fun to capture all cute reactions of kids through my lens. Since that day, I wanted to prepare pav bhaji and enjoy as much as I wanted, as I will be in restricted mode during such parties.. And now, today experimented Mumbai food in my kitchen and here it is !
Pav Bhaji is a famous street food of Maharashtra and is usually served with the soft bread roll. Vegetables are boiled, mashed and combined with spicy powder. I prepared homemade Pav Bhaji masala. But you can use readymade masala which is available in markets too.. I checked with my friend and she sometimes uses ready made masala – MDH Pav Bhaji masala. But I have never used it as I always prefer homemade powders.
I prepared this spicy powder in a large batch for later storage and later use. So, if you would like to prepare in small quantities, reduce the ingredients accordingly. You will find so many bright pictures in this post. It was sunny in burgh after a long time. how could I miss Sun! Hence, clicked bright pictures!
Now, on to the recipe!
Ingredients:
Pav Bhaji Masala Powder:
Spice level – Mild
- 10 – Dry red chili
- 10 – Kashmiri red chili
- 5 tablespoon Coriander Seeds
- 3 tablespoon Cumin Seeds
- 1 tablespoon Peppercorns
- 1 ½ tablespoon Fennel Seeds
- 20 Cloves
- 1 Inch Cinnamon – 5 Pieces
- 1 ½ tablespoon Amchur powder
Masala:
- 1 tablespoon Butter
- 1 tablespoon Oil
- 1 cup Cauliflower florets
- 1 cup Frozen Peas
- 3 medium Potatoes
- ½ cup chopped Carrots
- ½ cup Capsicum, finely chopped
- 1 Onion, finely chopped
- 2 medium sized Tomatoes
- 1 tablespoon Ginger Garlic Paste
- ¼ Turmeric Powder
- 2 tablespoon Pav Bhaji Masala Powder
- 1 ½ cup Water
- Salt, as required
Method:
Pav Bhaji Masala Powder:
- Dry roast all ingredients except amchur powder mentioned for masala powder in a low flame.
- Cool down and grind them into fine powder.
- Combine amchur powder and mix them well.
- Store in an airtight container for future use.
Masala:
- Pressure cook peas, carrots, cauliflower, potatoes in a pressure cooker for 2 whistles.
- Once boiled, mashed down the vegetables with the back of the ladle. Set aside.
- Heat oil and butter in a medium sized pot.
- Add onions and saute’ them until they become transparent.
- Add ginger garlic paste and chopped tomatoes. Cook until they turn mushy.
- Add turmeric powder and homemade pav bhaji masala powder.
- Stir well and cook them for few minutes, about 3 minutes
- Add mashed vegetables, salt and water to the mixture.
- Cook in a medium flame until the powders are absorbed completely by the vegetables.
- Switch off the flame once a thick gravy-like consistency is reached.
Adjust water level according to your need.
Toast pav in butter and serve with this spicy bhaji. Mix chopped onion and squeeze lemon over the bhaji for more elevated taste!.
