Maa Laddu | Pottukadalai Urundai
I know I have been MIA in this space. As you all know, I have been traveling extensively in recent days, involved in the preparation of changing my technology at work and also, spending plenty of time to improve my health. Well, Deepawali is around the corner and also a very good start to dust my cooking skills. And of course, blog them too.
Now to the sum and substance, today’s post is about a simple recipe which can be prepared with the common items in the Kitchen pantry under 30 minutes. As a kid, I loved this laddu and Amma used to prepare this often during our school days. Every evening I munch one and sometimes, two. Here I present my childhood favorite – Maa Laddu | Pottukadalai Urundai
Maa Laddu – Delicious Laddus prepared with roasted gram dal, sugar, ghee, and nuts. Easy to prepare and it just tastes heavenly every single bite.
Ingredients:
- 2 cup Roasted Gram Dal/Pottukadalai
- 1 cup Sugar
- ½ cup Melted Ghee, at room temperature
- ½ teaspoon Cardamom Powder
- 3 tablespoon Mixed Nuts (Almonds and Cashews)
Method:
- Dry roast the Gram dal until a nice aroma arises. Ensure to roast the dal only in medium flame. Do not over roast and burn the dal. This procedure takes about 3-4 minutes.
- Allow roasted dal to cool down.
- Once cooled down, grind the dal into a fine powder using a mixer. Sieve the flour before using it.
- Grind sugar into a fine powder using a mixer. Sieve the sugar before using it.
- In a bowl, add Roasted gram dal, cardamom powder, and powdered sugar. Combine them well
- In a pan, melt ghee and add the hot ghee to the bowl.
- Combine the nuts with the flour. You may roast the nuts in ghee and add to the flour. I prefer to add them raw and I usually add almonds more than cashews. Pulse the nuts and add to the flour.
- Combine them well so that ghee is mixed evenly with the flour. When the mix is warm, shape them into small balls. It’s easy to shape them into balls when it’s warm.
- Repeat the same for the remaining flour.
- Store the laddu in the airtight container for later use.
