Kesar Milk Powder Barfi – A Deepawali special prepared with whole milk powder, sugar and colored by saffron strands; loaded with gooey ghee for the richness.
The next on series for Deepawali is a milk sweet which is widely available and loved by everyone – a sweet which can be prepared in a number of ways according to your taste buds. I have always loved milk sweets – those melt in mouth deliciousness prepared with whole milk and rich in texture, and taste too. We don’t get a good variety of milk sweets in my hometown so whenever I visited Chennai, I have always wished to buy a pack of rich milk sweets from any famous joints and eat all alone. I know I sound weird but then this is me. When I moved to Chennai for my work, I have bought milk sweets every month and had it all alone. These are simple guilty pleasures of my life. I love pedas, Mawa burfi, Kajus, Basundi and cham cham. My love for milk sweets urged me to prepare this Barfi. Any sweet prepared using milk requires so much patience and takes long hours to prepare in right consistency. I have used Milk Powder instead of whole milk to speed up the process.
Now to the recipe.
Ingredients:
- 4 cup Milk Powder
- 1 cup Whole Milk
- 1 cup Sugar
- ½ teaspoon Cardamom Powder
- 8 tablespoon Ghee
- A handful of chopped nuts (Almonds and Pistachios)
Method:
- Sieve the milk powder.
- Grind the sugar into a fine powder using a mixer.
- Heat a thick bottomed pan and add ghee.
- Once the ghee is melted, add milk and give a stir.
- Now, add milk powder little by little to the pan and stir continuously. Ensure to combine them well and there are no lumps.
- Add powdered sugar and cook in low heat with continuous stirring.
- Keep the flame low. Ensure that the mixture is not burnt at the bottom and stir continuously so that there are no lumps.
- Cook until the mixture becomes thickened and starts leaving the sides of the pan. The mixture will not stick to the pan at this stage.
- Now remove the pan from the flame.
- Grease a baking pan with a spoon of ghee.
- Pour the mixture into the pan and shape the mixture evenly with the back of a spatula.
- Now, sprinkle generously chopped nuts on top of the poured mixture and press them gently.
- Allow it to cool down for about an hour.
- Once cooled down, invert the mixture to the plate and shape them according to your desire using a knife.
Please use whole milk powder and whole milk for the richness. Ensure to use a thick bottomed vessel and I always prefer to use a Dutch oven for preparing such sweets which spread heat evenly and also thick enough to sustain the lengthy process.
