Honeydew Cucumber Mint Popsicles – A perfect blend of ripe Honey Dew, Cucumber, and Mint Popsicles sweetened with Honey to refresh your soul and rejuvenate yourself! Perfect summer drink to reprieve from the heat.
Hope everyone is doing great. I really missed my space and my readers. If you are wondering about my absence in blogging for two weeks, then you should check out my recent travelogue here. We visited the Grand Canyon and Vegas and returned back exhausted. It was a huge transition from burgh which had a pleasant climate to deadly hot Vegas. We traveled across different time zones and walked miles to view this magnificent landscape. We got tanned due to prolonged exposure to high temperatures and dehydrated. Since then, I have taken a break and resting myself with homemade comforting food. We have been drinking a lot of liquids, summer drinks and consuming a number of melons to refresh our inner soul and bring down body temperature.
The climate was moderate and breezy since we returned from Vegas. But then, the last couple of days were sunny and we are snacking only on melons. Have you ever heard of “Cool as Cucumber”? Today’s recipe is one such simple yet easy recipe with cucumber to cool your body and rejuvenate your inner soul in a much enjoyable way – Popsicles.
Along with cucumber, it also has Honey Dew Melon and Mint to cool the blood and offer a rejuvenating release from the heat. Cucumber detoxifies the blood and relieves the stress. Mint adds an extra perk to the popsicles.
Ingredients:
- 1 cup Cucumber, chopped
- 4 cups HoneyDew Melon, Chopped
- 2 tablespoon Mint leaves
- Honey, optional to sweeten the Popsicles
Method:
- Cut the melon into halves. Scoop out the seeds, peel the skin and chop them into cubes.
- Peel the skin of cucumber and chop them into cubes.
- Wash the mint leaves and chop them coarsely.
- In a mixer, add cucumber, honeydew melon, mint leaves and puree until smooth.
- Pour the mixture in the preferred Popsicle mold and freeze them for least 4 hours or overnight.
- While serving, place the Popsicle mold in hot water for about 2-3 minutes. Run a knife/spoon along the edges and de-mold them.
- Drizzle a spoon of honey over the Popsicle and enjoy them.
