Hello all, Today’s recipe is banana bread! I bought bananas during my grocery shopping last weekend. I haven’t had few of those bananas, as a result, they completely ripened with their skin turning black. I didn’t have the heart to throw them in trash. What to do then, bake a bread! Black skin bananas are perfect for banana bread and when it is made without sugar, it is healthy too. Now baking is fun and healthy too
This banana bread is made up of whole wheat and sweetened with Maple syrup. You can substitute honey too. You can mix up nuts, raisins, and choco chips and make this bread a more delicious and a healthier one.
Ingredients:

⅓ cup high-quality vegetable oil
½ cup honey or maple syrup
2 eggs
2 large bananas, mashed
¼ cup milk of choice or water
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus more to sprinkle on top
1¾ cups regular whole wheat flour
½ cup mixed nuts – almonds, walnuts, pecan, choco chips and banana slices
Method:

Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan with baking spray.
In a large bowl, combine wheat flour, cinnamon, salt, baking soda together and mix them well.
In another bowl, combine oil and maple syrup together and beat them with a whisk. Add egg, vanilla extract, milk and beat well. Add in the mashed bananas.
Combine wet ingredients with dry ingredients and mix them well. Some lumps are good to go. If you would like to add nuts/chocolate chips, stir them now.
Pour the batter into the baking pan and sprinkle cinnamon on the top. If you want swirl on the bread, run a knife on top of the batter in a zigzag pattern.
Bake them for 50 -55 minutes or until a toothpick inserted in the pan comes out clean.
Cool down the bread in the pan for 10 minutes. Run a knife around the edges of the pan and cool down the pan in the wiring rack for another 30 minutes before slicing them down.
This banana bread makes a perfect breakfast and can be stored in airtight container for 2-3 days. Serve the slice of bread with a dash of honey and fresh fruits!
