Mildly spiced with cumin, this baked cauliflower is the perfect appetizer you can whip in a few minutes for your Thanksgiving dinner.
Hope everyone had a great ThanksGiving! My heartfelt thanks to everyone who is still sticking with me in this space. We celebrated Thanksgiving at our home this year. It’s the first Thanksgiving for Little R. I still remember the days when I used to shop the whole Thursday night – long queues, shop hopping, hot chocolate and returning home with shopping bags. Gone are the days – all I need now is to stay at home, have a relaxed day with San and Little R, eat good food and rest well. Motherhood changes your priorities. Isn’t it?
With Little R and with the current pandemic situation, we don’t want to shop and expose little R to the crowd. We stayed at home, cooked a plethora of dishes, had good food, watched movies and took a rest. I wanted simple, healthy yet flavorful recipes which Little R can also enjoy. This Cumin-spiced baby cauliflower is one such dish which Little R loved. We have been offering family meals to Little R with reduced spices. He has been eating from the family pot and he loves it. I usually reserve a small portion for Little R before adding salt and then, add spices according to our taste.
I always prefer baby cauliflower for such baking recipes as their stalks are tender. All you need is the spices available in your pantry and 20 minutes of your time. I usually buy baby florets from Trader’s Joe.
Ingredients:
- Baby Cauliflower Florets – 1 pack
- Olive Oil – 1 tablespoon
- Turmeric Powder – 1 teaspoon
- Cumin Powder – 1 teaspoon (adjust according to your spice level)
- Salt – as required
Method:
- Wash florets and drain the excess water.
- In a bowl, combine florets with other ingredients and toss them well as they are evenly coated with spices
- Let it sit for 10 minutes. Preheat oven for 350
- Line a baking tray with olive oil
- Arrange the marinated florets on the tray and bake for 8 minutes
- Turn the florets and bake for another 5 minutes until they become crisp
- Enjoy the florets with yogurt or as it is
