Cream of Mushroom Soup – Mushrooms are cooked with onions and coconut milk; later grounded to smooth paste and seasoned with pepper. A flavorful soup which can be prepared in 30 minutes and its Paleo.
The climate in Burgh is ever-changing and it was really cold for the last couple of days. Soups are the best way to warm up yourself during winter. A hearty soup not only warms up your body but also your soul. I decided to prepare soup to fight against my sore throat. When I ransacked my fridge, I could find only mushrooms and before I picked the bag, I decided in mind to prepare a creamy mushroom soup. Since my PCP advised me to avoid dairy as much as possible, I have been using almond milk for smoothies and coconut milk for soups.
Mushrooms are cooked with sauteed onions, garlic, and coconut milk; once cooked, they are grounded into a smooth paste and served with sauteed mushrooms or with croutons.
Now to the recipe
Ingredients:
- 3 cups Baby Bella Mushrooms, chopped
- 1 tablespoon Ghee
- 1 big Onion, chopped
- 2 Garlic Cloves, chopped
- 10 – 12 Black Pepper Corns
- ½ cup Coconut Milk
- Salt to taste
- Water, if required
Method:
- Wash Mushrooms with water; Drain and chop them into pieces
- In a saucepan, add ghee and heat over medium flame
- Add onions and garlic; Saute until the onions become translucent
- Add mushrooms and saute for about 5 minutes
- Add coconut milk and cook until mushrooms are cooked properly and the soup thickens
- Add water if you prefer according to your desired consistency
- Season with salt
- Remove the heat and allow it to cool down
- Once cooled, add peppercorns and grind them into a smooth paste using a blender
- Bring the grounded paste to boil. Adjust water according to your desire
- Serve Mushroom soup warmly with sauteed mushrooms or with croutons
