Yayyy It’s Friday! This Friday is not as usual one as my bestie is leaving to India for vacation. Those who live away from their home could sense the excitement and exhilaration. We were in a shopping saga for the entire week; visited every shop at all corners; tasted chocolate of every available flavor; Packed weighed and repacked; Happiness overloaded!
The feel which you get when you are about to visit family after a couple of years is priceless, cannot be expressed in words. I wouldn’t say life away from home is hard but every moment spent without family leaves you an emptiness inside. The very purpose – like family commitments/ambitions fuel our day and keep us moving. After bidding bye at the airport, here I am, sank in the solitude state and enjoying my sip of coffee, of course without my friend. Hence, for the next few days, it’s me and my own messy schedule with weird kitchen experiments! Jeezzzzz…..
Here is my new experiment on Mexican cuisine. I normally look for healthy options if I would like to eat out. And prefer Mexican over other as they do have a wide variety on their plate like Avacado, mashed beans, bell peppers and they do have cheese! He he.. Moreover, it is very easy to prepare – Saute the required veggies, stuff inside the tortillas, season it with cheese and enjoy it !

Quesadilla belongs to Mexican cuisine which is a tortilla, usually corn tortilla or sometimes wheat tortilla which is filled with cheese and then grilled. Vegetables, chicken or meat are stirred in to provide a delicious blend. The mixture is stuffed between two tortillas along with cheese. Single quesadilla is prepared with a tortilla and folded like a half moon. Quesadilla is a kid friendly recipe with loads of gooey cheese. The addition of broccoli makes it more nutritious and peppers give a vibrancy to the dish with its color. Serve Quesadilla with Guacamole on the sides.
Ingredients:
- 1 Small broccoli, chopped into small florets
- 1 Large Yellow pepper, thinly sliced
- 1 Jalapeno pepper, deseeded
- 1 tablespoon olive oil
- ¼ teaspoon Paprika
- ¼ teaspoon salt
- ¼ cumin powder
- ¼ black pepper, freshly grounded
- 1 cup of Mozzarella cheese
- 4 Wheat Tortillas/Corn tortillas
Method:
- In a skillet, add oil and heat the oil over medium heat.
- Once the oil is hot, add chopped broccoli and bell pepper.
- Now, add the spice powders and salt to the skillet.
- Cook them until the vegetables become tender and blended with spices
- Heat a small frying pan over medium heat.
- Place a wheat tortilla on the pan. Place cheese on one side of the tortilla.
- Top the cheese with broccoli mixture. Sprinkle cheese on top of the vegetable blend. Fold the tortillas and cook them until they become brownish. Flip the other side and cook until they turn slight brown.
- Serve the cheesy quesadillas with spicy ranch or with tomato sauce
