Blackberry Mint Flavored Iced Tea!
As I sit to write this post, it is windy outside and I could see my little tomato plants are dancing to the tune of wind. By the way, did I tell you? I am planting some herbs and vegetable for this summer. Ohhh, it is a time-consuming process but then I love to do. Grow what you eat and eat what you grow. They are organic too. I can’t wait to see my balcony with full of colorful flowers and vegetables. Though summer started officially, it was pouring out heavily till yesterday. My joy knew no bounds when I saw sun smiling brightly today morning. I kept these little tiny ones out in the terrace so that they too enjoy Sun and its Shine. Hmmm, but they can’t keep themselves calm and now they are dancing for the wind. I am worried about them but then SJ said it has to be outside and get accustomed to changing weather conditions for their survival. Immediately, I remembered how my parents used to say as we got to study outside our hometown and away from them to learn about life and people. How true it is!
When I travelled for the first time across the seas, I don’t know driving or I am not used to meeting a new set of people. But this two year of stay changed me a lot. I am able to manage myself on my own and have become more independent. Yippeeee, I drive now!
Now, to the main sum and substance, the sunny day always calls for an iced tea. I love berries; whenever I see them fresh, I never hesitate to pick a pint of them. I bought blackberries during last weekend shopping. I never eat blackberries as whole – due to its skin but I love to prepare syrup out of them and stir them into Iced tea, desserts and sometimes for pancakes. As usual, I prepared blackberries syrup on Friday night to use them for pancakes on Monday morning. But then, bright Sun came with its own plan and changed mine too. And here it is – Blackberry mint iced tea.
Ingredients:
- 1 pack of blackberries
Handful of mint leaves
Handful of black tea leaves
Honey for sweetening
Method:
- In a pot, add water, black tea leaves, and mint leaves; Bring them to boil. Once they start boiling remove them from the flame and allow to cool down
Meanwhile, in a saucepan, add two cups of water and blackberries. Bring them to boil. Cook till the fruits become soft and water is absorbed. Mash berries with the ladle.
Remove from the flame once saucy consistency is reached. Allow it to cool down
Combine tea and syrup in the ratio 3:1 and stir them well
Add honey as per your requirement.
I love to drink them as it is without honey. The syrup can be stored for days and can be used for pancakes, desserts and even for French toast.
And you know what, syrup can be prepared with any berries! And strawberry syrup tastes out of the world.
