Aloo Gajar Ki Sabzi – A simple stir fry of Potatoes and Carrots without onion and garlic, perfect if you are on fasting.
People fast for various reasons and they avoid certain ingredients on the fasting day like onion and garlic. I do have a friend who never uses onion or garlic in any of her recipes. She believes onions and garlic attract negative energy and is not advisable for persons seeking spirituality. According to Ayurveda, foods are classified into three categories – sattvic, rajasic and tamasic. Sattvic represents the mode of goodness; rajasic – mode of Passion and tamasic – mode of ignorance. Onions and garlic are classified as rajasic and tamasic; when consumed they increase passion and ignorance. Vaishnavas and people who seek spirituality prefer to prepare their food using sattvic ingredients. Hence, many people prefer to avoid onion and garlic in their meal options. If you are looking for a no onion and no garlic recipe, then this potato carrot fry serves as the best option loaded with the required healthy benefits and carbohydrates.
Aloo Gajar ki sabzi is an effortless dry sabzi prepared with Potatoes and carrots. The recipe doesn’t call for onion or garlic and thus making it perfect for a fasting day. This is such a versatile one as you can stuff inside chapatti or simply serve with dal-rice. The colors of Potato and Carrot are complementary and loaded with the required carbohydrates for a day. At the end of the day, who wouldn’t love potatoes?
Ingredients:
- 2 Medium sized potatoes, cubed
- 2 Medium Carrots, cubed
- 1 tablespoon Vegetable Oil
- 1 teaspoon Cumin Seeds
- 1 inch Ginger, grated finely
- 3 Green chilies
- ½ teaspoon Turmeric Powder
- ½ teaspoon Red Chili Powder
- ½ teaspoon Coriander Powder
- ¼ teaspoon Garam Masala
- ¼ teaspoon Dry Mango Powder/Amchur Powder
- ½ teaspoon Salt
- 3-4 tablespoon Water
- Coriander leaves, handful for garnish
Method:
- In a medium sized skillet, add oil and heat over medium flame.
- Once the oil is hot, add cumin seeds and wait till it sizzles.
- Add grated ginger and saute till the raw smell goes off. Add green chilies and saute them for 2 minutes.
- Reduce the flame. Add turmeric powder, red chili powder and coriander powder to the skillet. Stir them well.
- Add cubed potatoes and carrots to the spices and combine them well.
- Add water and Cook in lower flame with the lid covered till it becomes tender. Stir occasionally to prevent them from being stick to the bottom of the pan.
- Once vegetables are cooked completely, add amchur powder, garam masala and stir them well.
- Season it with salt. At the end, garnish with chopped coriander leaves.
- Serve with steam rice or stuff inside chapatti.
