As I unwind myself in my leather couch, my mind ponders about my day and relives every minute of the day. Days run faster than we think. Isn’t it? Time and tide wait for none. With every single passing day, the fact that I am getting older strikes hard. I could see strands of white hair and those wrinkles under my eyes. Phew! Life goes on. We do have limited life but endless hopes and dreams to make this short live more lovable and lively. Let’s hope for the best. Let’s spread love and smile.

The path of life may be rough but be prepared to give a tough play, as only tough ones last. Dream big for it fuels your life and keeps you going. Live a life that you won’t regret at the end. I am a dreamer. As a child, I wanted to become a doctor when a doctor advised injections for every single time I visited her. When I saw a painter playing with colors, I wanted to become a painter as I was interested in arts. On seeing a patriotic film, I wanted to become a fighter. When I heard from my aunt that teacher enjoys public holidays, I wanted to become one teacher. When my family praised my distant cousin who settled in the US after his engineering, I wanted to become Engineer. I have dreams of different shades and above them, hopes. And I keep them close to my heart.

My recent dream/wish to redefine and refine me. Every day hits me hard and echoes that life is short. For all that I want to accomplish, I want myself to be strong, physically and mentally. Over the years, I have learned and evolved as a better person but then, I have never been a health freak or worried about it. But recent days have been tough. I want those extra time in my bed in the morning, long for that one-hour massaging where I can happily relax and unwind, weekends for long showers and my pedicure sessions. These are signs of aging. Aging is inevitable but I would love to age gracefully. I have started prioritizing my health and have been in the process of lifestyle modifications. I reduced my intake of carbohydrates and consumed them along with proteins. I never skip my breakfast. I cautiously take steps to accept the life as it is than exaggeration or over reaction. I avoid foods with gluten and have been trying paleo recipes in my kitchen. I am so thankful to my friend –San, who insisted me to try avocado. Since then, I can’t live without them. That’s my go-to breakfast option. Avocado is loaded with heart-healthy monounsaturated fatty acids, fiber rich and antioxidants. Eating avocado may help you to lose weight.

Here is my favorite breakfast recipe:
Ingredients:
- 1 ripe Avocado
- 2 cups Unsweetened Almond Milk
- 1 tablespoon Pure Maple Syrup (I use Aunt Jemima, pure maple syrup is gluten free)
Method:
- In a blender, add avocado, almond milk and blend them together.
- Add maple syrup for the sweetness and serve it chilled.
That sounds an effortless option for the weekday mornings. This had been my breakfast for about a month and over the time, I experimented few techniques to keep the ripe cut avocado fresh. When you store cut ripe avocado, they become brownish the next day and looks pathetic.
Tips and Tricks:
- Tips to store cut ripe Avocado, Chop onions, and place half cut ripe avocado with the onions in an airtight container. The skin should touch the onion chunks and the pit should be placed on top.
- Refrigerating Avocados halts the ripening process. Storing avocados with ripe bananas will speed up the ripening process.
- Avocados slip out of hand and one cannot cut it without getting your hands messy. The trick is to Slice the avocado with the shell into halves and gently scoop out the flesh using spoons.

I've yet to try avocados in a sweet recipe, but this sounds good! When I buy avocados my kids always eat them up before I get a chance to do anything with them. Apparently I'm raising avocado fiends. LOL!
